frosted coffee cupcakes.
we have finally learnt that not many things makes us feel better than baking. and better still when they come out as attractive as these do.
the recipe is straight out of the last success, except when it was time to add the milk, we mixed in some instant coffee (from starbucks). it not only gave it the kick up the cake it needed but also helped cut down on sweetness.
frosting as always is just some butter, like double as much icing sugar, a bit of vanilla essence and pinch of salt. we recently invested $7 whole dollars for an electric mixer from the fine line of products at walmart. this saved our arms from lodging a complaint with their union reps.
ALSO, THEY’RE FUCKING DELICIOUS. try it.
white (but really orange) cake with chocolate frosting.
it’s super simple if you’ve got four good arms for some hella mixing. we found that it didn’t have quite the kick we want from a cake. looking into adding some coffee or nuts next time around.
- 1 cup sugar
- 1/2 butter (room temperature and soft)
- 2 eggs at room temperature also
- 1 teaspoon vanilla essence
- 1 and 1/4 cup flour
- 1 and 3/4 teaspoon baking powder
- 1/2 cup milkmix the butter and sugar until your body hates you (3 minutes is my limit). beat the eggs in one at a time. add the vanilla (and any food colouring is optional. we prefer ORANJE.)
stir in the flour with the baking powder and slowly slowly add to the wet mixture. when it’s pretty much mixed in*, add the milk so that it’s gets to that comfortably thick but not crazy thick batter level.
pour into one 9 inch baking pan. times everything by two if you want a layer cake, but that’s obvious. don’t be simple, butter the pan before and all that junk. oven at 350 for 25 minutes. that is it.
*a note on over-mixing: IF ANYONE KNOW THE FUCK THAT MEANS PLEASE DROP ME A HINT.

recipe for cupcake from here. though the measurements gave us double the number mini-cupcakes, this is perhaps the best recipe we’ve followed to date. they are scrumptious.
frosting is but butter whipped to hell and back, icing sugar, vanilla extract and melted chocolate. i’ve heard told that adding a pinch of salt cuts back on the sickening sweetness. (humble-brag alert: we are without electric mixers, so you’re looking at the delumptious results of four tired and toned arms.)
this being our first attempt at artsy frosting, they’re a little wibbly wobbly. but give us time and an unlimited supply of cupcakes and we’ll show you just how we could…nom nom.

but look at those colourful little buttons of love. they are perhaps the most adorable thing of food we have ever created. with the recent fortuitous acquisition of mini cupcake tray from a little place called walmart (they have a few branches, i hear), i look forward to making and nom nommming more chubbsywubbsy cakebabies often. almost too often.
they make me so happy that i’m starting to think these feelings for food is not normal.
